I've always done the bleach route, I guess bleach is always at hand lol.
aquarists use PP commonly to treat their plants. it's just as effective but less dangerous than bleach. and i believe can be completely rinsed off unlike bleach.

i'm not talking about buying compressed co2 although that would work too.
for co2 there's the dry ice method - sugar, water and yeast and a couple other formulas.

I am getting read to make the top to the vivarium. My plans are to use acrylic and mount fans to it to blow against the glass to remove the condensation. I wondering how much circulation is enough and how much is too much. I want to build something to direct the airflow directly against the glass. Is there a certain size of fans that anyone would recommend?

I would hook whatever fans you get to a variable-voltage adapter so that you can control the speed of the fans. That way you can find an optimal level.

I use the cheap 40 or 60mm computer fans mostly, but I've used larger ones as well as more fancy waterproof ones. I'd recommend waterproof ones, but they're not particularly cheap.

glass would be better than acrylic for the top if you can do it.

1 or 2 fans like the one pictured should be perfect depending on placement and distribution.

I was told acrylic was better because it didn't filter out any light, where glass does. I know glass is cheaper, but isn't acrylic more clear?

yup... until it's too hot and dry on one side for too long. glass can take a lot more punishment and still be wiped clean. it can take more abrasive cleaning also.
